Sophisticated (+ simple) Salmon

Pistachio Crusted Salmon

Ingredients

4 salmon filets (~2lbs total)

2/3 cup shelled pistachios, crushed (if salted, omit extra salt)

3 cloves garlic

2 tbsp Dijon mustard

1 tbsp Olive oil

2 tbsp Fresh Squeezed lemon juice

2 tsp Honey

Salt & Pepper to Taste

 

Directions

1.     Preheat your oven to 375 degrees Fahrenheit.

2.     In a small bowl, combine the mustard, lemon, garlic, olive oil and honey. Whisk if needed.

3.     Add the crushed pistachios to the mixture and combine, coating all the pistachio pieces. Add salt & pepper to taste.

4.     Pat each salmon fillet dry then place on an oiled baking sheet.

5.     Carefully top each salmon fillet with the pistachio mixture. If needed, pat down the mixture to help it stick to the fish.

6.     Bake the salmon for 12-15 minutes, depending on the thickness.

7.     Let cool for 2-3 minutes before serving.
